Chickpea “egg salad” (mashed chickpeas with mustard and vegan mayo) sandwich, rainbow salad and a home made pickle 🙂

Gather all the things! Rice, Sesame Oil, Chili Paste, Green Beans, Garlic, Onion, Swiss Chard, Slivered, Zucchini, Black Beans, Almonds (or whatever else you want)
Chop ALL The Things!
Oil Up Your Pan. I used Sesame Oil and Earth Balance (soy free).
Sautee Some stuff (I did onions, garlic, green onion & slivered almonds)
Slap in some chili paste and whatever else you want it all to taste like (I also threw in chili flake).
Throw in the chard, let it wilt.
When it looks like this add in and sautee the rest of the veggies, black beans and whatever else you’d like.
If you’re not full vegan, and want to add a little more protein, crack in a couple of eggs and toss around.
When it looks like this you’re about done!
